When Undyne first appears, she's a bit mysterious, but no doubt menacing; she's strong, throwing spears from every direction, and stops at nothing to get the protagonist. Truly, the head of the Royal Guard must be rational, levelheaded, serious...
Yeah, right. The second Undyne flings off her helmet, a very different picture is portrayed; while Undyne may be disciplined and keep the Royal Guard running effectively, she's also loud, brash, reckless, and a whole lot more ridiculous than the armored person chasing you around Waterfall would leave you to believe. She's incredibly passionate and loyal to her cause, her people, her ruler Asgore; she values freedom highly and firmly believes that killing the human and taking their soul to Asgore to make him a "god" that's capable of destroying the barrier is going to save all monsters and lead them to salvation. In fact, you are the bad guy for wanting to stop everyone from going free. Maybe she's a little idealistic, maybe she's deluded, but there's no argument that her highest priority is absolutely the well-being of her people.
And conversely, she... Well, she's definitely heavily distrustful of humans. They're the reason monsters are trapped underground, they're the obstacle between monsters and freedom, and she consistently doubts their character and intentions. Despite all this, she still believes in fairness; whether it's for the sake of fairness or for the sake of her pride and showing off how much better she is than humans is up for debate (it's probably a bit of both,) but she gives the human a spear to defend themselves with for the sake of a fair fight. She does end up changing her mind on humans somewhat as she befriends Frisk; she realizes they're a good person and don't wish any harm on her, and she doesn't want to see them hurt either and will simply kill the next bad human that falls in instead. Not all humans are bad and she'll give them a chance, but most of them are probably not like Frisk. Baby steps.
Undyne is pretty intense and overwhelmingly herself, and being overwhelmingly herself means loving to fight, get stronger, and to beat up bad guys, although her definition of bad guys might be a little different than everyone else's (or maybe not, because generally she will probably think you are bad if you kill her people or her friends. Generally speaking, murderers aren't good people.) She invites her neighbors out to wrestle, gives her friends noogies, and generally roughhouses around and calls half of her friend some variation of nerd- it's part of the Undyne experience. To further showcase her hotblooded intensity, put her in a kitchen; she's reckless and gets so wildly out of control with her fighting spirit and more heat that she ends up burning her house down.
This happens a lot.
In addition, she's rather prideful; if her pride wasn't obvious from giving Frisk a spear to defend themselves with, her pride is definitely hit when Frisk first shows up at her house after defeating her, and she assumes he's there to rub it in her face and humiliate her, and not for any genuine intentions. Also highlighted in her house is her competitive nature, as Papyrus says I guess you're not up for the challenge of defeating the human, and from there, it's on. She really can't say no to a challenge.
But Undyne isn't just the fiercely devoted leader of the Royal Guard, and she isn't just a rough buddy that slaps you way too hard on the back, either. Undyne has a tendency to teach people; for Shyren, it was piano lessons, for Papyrus, it's cooking lessons, for Frisk, how to properly block her attacks (if they don't immediately catch on) and for the entire Royal Guard, how to fight. She cares deeply for her friends- and her fellow monsters- and never does anything to deliberately hurt them; in fact, the one time she does hurt someone she likes, it's Asgore, back when he was training her, and she was guilty after the fact, so it's clear that she just doesn't like hurting the people she cares about, no matter how much she loves fighting and tussling around. She cares deeply for her friends and is definitely observant and attentive of them; although there's nothing to tell her that Papyrus is dead if you kill him, she goes into how he never misses training, he always picks up at the second ring no matter what time of day it is, and so on. She's considerate of her friends needs and what would and wouldn't hurt them- if you kill her, she says there's a reason why she could never tell Alphys; she withheld her feelings because her line of work is dangerous.
Speaking of Alphys, it's no secret that Undyne has a huge crush on Alphys, but she can never really figure out the right words to tell her. So they're just, you know! Really good friends! Which is why she's the nerd that would be allowed in her room. You know. She likes the passion she puts into her work and listens diligently to everything she has to say... Which incidentally is why she thinks anime is real.
Strengths/Weaknesses:
✔ Undyne is nothing if not determined. She will relentlessly pursue her goals to her death, and actually even a little past that, at least in her canon. Determination is a trait that allows people to come back from the dead, heal wounds, and even rewind time, in extreme cases; while Undyne's Determination isn't quite that strong, it readily lets her come back from fatal wounds and continue to fight until she melts away. While she obviously won't have Determination, she still has her determination, and given that she's the only monster that has this trait, that's a hell of a lot of willpower. When Undyne wants to accomplish something, she gets it done, and pretty much nothing short of dying or collapsing from heat stroke is going to slow her down.
✔ Asgore came up with killing humans and gathering their souls to inspire hope in his people, and Undyne is a prime example of that hope. She's known as a hero at home and some tiny monsters with no arms even idolize her for it; she's definitely full of hope, and inspired by her peoples' hopes and dreams. She'd protect them with her life and fight anyone that got in the way of their freedom; seven human lives is a small price to pay for the happiness of all of her people. Even when she decides to spare the human Frisk, she puts her full hopes in the idea that they'll be able to work things out peacefully with Asgore, despite the odds. Whatever she believes in, she believes in it wholeheartedly.
✔ Undyne is passionate in just about everything she does; she's passionate about protecting her people and freeing them from the underground, she's passionate about fighting, she's passionate about making pasta. She's passionate and likes passionate people; whatever someone's doing, they should be going at it 100%, no looking back, with a whole lot of fighting spirit. ...Undyne's a bit of a dweeb.
✔ Undyne is deeply caring of not only her people, but her friends; she looks out for them, keeps them safe, and does her best to give them the best opportunities she can. She hates seeing them hurt and likes to look out for them whenever possible; when Alphys flat out said she lied to her about everything, Undyne was more concerned about her than herself; despite Papyrus' many tries to get stronger and join the Royal Guard, Undyne is reluctant to let him in not because of his strength, but because he's too nice and she doesn't want to see him get unnecessarily hurt. She teaches Papyrus to cook as well as trains him so that he won't have to, and has a tendency to teach her skills to whoever needs them; Shyren, Papyrus, the human... Whoever calls for it at the time.
✔ Physically speaking, Undyne's ridiculously strong; she's a Pokémon in her own right and casually suplexes boulders, just because she can. She can pick up the entire cast at once as well. Obviously being humanized and nerfed she won't be nearly as strong, but given that there's a 50% of abilities that are more normal I actually don't know exactly how nerfed that will be? Probably "stronger than she looks" and able to pick up people quite a bit heavier than she is, but nothing too drastic? Or maybe if she ever goes on a badge quest she'll be held up by trying to wrestle Chuck. I'm cool with whatever, really.
✘ Undyne goes at everything fully passionate, one hundred percent, and there is very little concept of consequences involved in the making of any of these choices. She'll jump in front of someone to save them and get killed herself, she'll recklessly pursue the human right into the area with volcanoes in her hundred pounds of armor; very little foresight seems to go into her decision making once she gets worked up. And even when she isn't worked up, she simply loves to fight, and part of that is constantly giving out noogies or weirding out her neighbor by asking them to wrestle. Her entire full throttle fight me attitude can very easily repel others.
✘ If there's someone who gives up, it... Isn't Undyne, and that goes straight into flaw territory. Once she's convinced of how things are supposed to be, it's extremely difficult to change her mind; she's the only monster that won't eventually spare you, and that's because you lead her into an area hot enough to start giving her heat stroke mid fight. She will hit down your arguments and assume the worst of you once that's her reality, and there's no backing down once she's decided something, both out of pride and stubbornness and out of a sheer inability to acknowledge that she might be wrong once she's riled up enough. She's completely uncompromising.
✘ Speaking of not giving up, Undyne is also ridiculously competitive. Not the kind of competitive where you like getting into an eating contest every now and then, oh no. Undyne's the kind of competitive where if it's even suggested that she can't do something, she'll put her all into making sure she does exactly that, because that's a challenge, and she can conquer any challenge that's put in front of her. ...She's a little easy to manipulate this way. Good thing no one would ever use that for something bad. ...Right?
✘ In an underground full of monsters that are just hilariously bad at holding any kind of resentment, Undyne, well. She's one of the few monsters that really seems to understand the gravity of heading out to war, given the rest of the monsters gleefully talk about exterminating humanity while serving you food. Undyne's feelings on humanity in general seem to stem less from legitimate hatred and more for intense distrust; she doesn't trust their motives, their disposition, or really anything about them after what they did to her people. ...Her feelings have become slightly less severe since meeting Frisk, but it's a work in progress.
✘ Speaking of disliking humans, she's going to be completely upset and out of her element regarding being a human; she knows deep down that she's still a monster but it doesn't make it any less pleasant being one of the species that locked her kind underground, to say the very least. She's also not going to take very kindly to the way things work in Johto in general, given that she's used to being more like a Pokémon than a human and that's pretty much taking her kind and putting them in balls to fight each other on human orders. Now that's messed up.

First Person Sample: Alright, listen up, wimps!
[Well then, we're all off to a great start.]
You know, you humans already proved yourselves to be way less cool than I previously imagined. And trust me, the bar was pretty low!
[Because while she loves Frisk dearly- er, doesn't want to spear them in the face a lot, yeah that- they weren't the best reference to live up to. And absolutely no one here has had giant swords or huge robots or... Well, if they had magic, she'd be pretty pissed off, because where's her magic, but- this isn't the point.]
But today you've reached a new low! There's a place you can go to buy eggs. Not for eating, but to hatch Pokémon.
[Yes Undyne oh god what is the problem now-]
Can you believe that? You all sell these monsters' children? How would you feel if your offspring were all gathered up and sold for some pocket change?
[God dammit Undyne, here we go again.]
Third Person Sample: Being made human has got to be one of the worst experiences Undyne's ever had, yet while she would love nothing more than to call this out for the injustice it is, the fact of the matter is that she's not alone. No, she has the strange little monster that gets her colors following her around as well, and she keeps staring at her. What does she want? Is she looking for guidance?
Well, step one is getting rid of this stupid ball it was in and crushing it right under her heel. It's a shame that there are no convenient boulders to bury it under. (She can still lift boulders, can't she? Humans aren't that lame, right? The ones in New Bark certainly didn't have any swords on them, let alone large ones, and she didn't see a single giant robot or magic wand or anything cool. Obviously they're too busy getting their kicks from putting monsters in balls.
"Screw that! Humans would try to pull something like that, wouldn't they? Keeping their monsters in balls, giving them freedom on their watch..."
Certainly not her, that's for damn sure. She turns to the Totodile and gives her a big grin- Undyne's teeth, while still sharp, aren't nearly as big and menacing as they should be, and- seriously though, does she look like a monster that wanted to be a human, did being significantly less made of magic seem high on her priorities, why- come on, Undyne, focus here.
"Listen, little guy. Do you have a name?"
There's no response from her Totodile, but she does snap her jaws as if that's an acceptable answer. Undyne takes a moment to admire the size of those chompers.
"The quiet type, are you? Well, I'm here to tell you that you're a free monster, you got that? You go and do whatever you want! I'm not the boss of you. And if I have anything to say about it, you're never going in one of those tiny little balls again."
They're in such a free world, with fresh air and a clear sky and man, that's the sun, and the warmth coming off of it feels so good, even in cold like this... But still, after fighting for her own people to enjoy the sunlight like this for so long, who the hell is she to try to keep anyone around her? If this kid wants someone to look out for them, that's one thing, but not before making it very clear that she's allowed to go wherever the hell she wants.
Her Totodile is quick to give her a very brief and to the point answer; namely, nibbling on her leg affectionately. She's in this for the long haul.
Undyne grins even wider. So she does want someone to look after her. That's not her usual job, but at the same time...
"I like your spirit, kid. Stick with me. I'll keep an eye on you."
She can make an exception. If her Totodile doesn't want to be alone, what is she going to do, leave her anyway? Not a chance.
