A reminder for those waiting to hear back, please don't be worried if we skip yours while going through them. It only means we needed a little more time to research!

Personality: Big McIntosh is a hard-working pony, dedicated to his family and to their farm. All of the Apple ponies embody honesty, especially the more prominent cast member Applejack. She is Big McIntosh's sister and the two have a similar work ethic and demeanor. The biggest difference we see between the two is that while Applejack has a headstrong and stubborn streak, Big McIntosh is more laid-back and down to earth.
When they were much younger, Big McIntosh was content to stay at home and work the farm whereas Applejack headed off to the bigger city. Big McIntosh is very upset by his sister leaving, and when she comes home very happy. No matter how stubborn or headstrong she gets, Big McIntosh stays calm and accepting. He is honest with her and straight forward with his opinion but once her mind is made up he lets her do what she chooses. We do get a hint that he's not all seriousness and hard work though. Applejack makes a reference to a wager she made with Big McIntosh where he would wear "Granny's girdle" through town if Applejack completed a chore.
His great strengths are as mentioned above: he's very hard working and if people need help with any physical labor he would be the pony to go to. Big McIntosh, as his name suggests, is much larger than almost every pony we have seen in the show (even the other male ponies). He's taller and broader and the fact he wears the work harness all the time we can assume he spends most of his time plowing the fields at the Apple family's farm. That's not to say he could rival a horse but he would give it his darndest if anyone needed him for anything. He's honest and kind, and should have little problem getting along with most anyone. Getting along with skeptical humans would not be so much an issue for him either, he's so laid-back.
As for weaknesses, there is a point at where his laid-back nature is unhelpful. For example with Applejack, even though he let her go off to work herself to death because she was so stubborn, he could have gone to her friends and told them what was going on. I don't think he would do it behind her back but he could have told her what he was doing before he did it. Instead he just let her do it even though it was a stupid thing to do, and no matter how bad it got, we never see Big McIntosh try to talk any more sense into her or get her friends to help.
One of the few instances we see him actually upset is when three young ponies (the Cutie Mark Crusaders) write hurtful tabloid articles about him and Applejack. When he confronts them he gives them quite the scolding over this.
Strengths/Weaknesses:
Strengths: very strong, very physically fit, calm, down to earth, gentle, friendly, honest, reliable, helpful, hard working, knowledgeable about plants, experienced farmer, decent at maintenance
Weaknesses: unambitious, sometimes too easy-going, narrow scope of interests, doesn't get himself involved in other people's problems, he would not be good at nor interested in fighting and might just faint at anything too horrifying or scary

First Person Sample:
From what I gather, most of 'em Pokémon [pronouncing the word slowly and deliberately in order to say it correctly, or so he hopes] have some sorta fightin ability. Now granted I ain't tried to have this cute lil critter fight nobody. But all he seems to wanna do is sit here an... weave.
[Big Mac is also sitting, long and very foreign human legs stretched out, with the tiny, leafy caterpillar on the floor by him. It is now weaving itself a little leafy hat. Big Mac hums, not overly bothered by this. He would not like to be a trainer, he already knows that.]
Reckon I just really wanna make sure this Sewaddle's alright. If anypony knows, I'd sure appreciate it. [Big Mac closes his eyes a long moment and nods] We get along real well though, least ways we eat some same kinda things.
Third Person Sample:
Big Mac wasn't much comforted by the fact that he was larger than most humans, just as he had been larger than most ponies back home. Not that anyone would or could really discern his discomfort, as his face was quite neutral to the point of being calm and relaxed. But neither was he moving around or working, which anypony who knew him would understand, for Big Mac that was concerning. There was little he liked better than working the fields, the next best thing would be helping around some pony's home or around town even.
But with these weird hands, and these wiggly fingers, he didn't know much where to begin. Most of all he missed his family, and that was dampening his mood even more than finding himself in a bizarre body. And so for now he sat, watching the Sewaddle. Big Mac was trying to come up with a name for it and the best he'd come up with so far was Bud. "You're my lil buddy now," Big Mac said, reaching out to touch at the little Pokémon who rubbed itself against his fingers and the former pony had to marvel at the feeling, so different from touch to his hooves.
A new song started in the background, quiet but upbeat, and it cheered Big Mac up considerably. That's one thing he really liked about this new home of his, all the cheerful music. Big Mac hummed along even though he didn't know the tune, and he picked up Bud and smiled at the bug creature's unhappy squeaking at having his newest weaved jacket rumpled. Soon the caterpillar was content in being petted though, especially as McIntosh hummed happily to him. Soon he would get up and test out these legs again, take Bud outside to stretch his tiny legs too. But for now, he was content to just sit here getting acquainted.
