For Pinsir, she'll send out Crobat for a super-effective Flying-type bonanza. It's when Heracross comes out that things will be a little...tricky.
Because her Sylveon so desperately wants to fight in a gym battle, she'll cautiously send her out and while there's an advantage over Heracross' secondary type BOY OH BOY THIS EEVEELUTION SURE IS LIKE EIGHT LEVELS BEHIND so that's a problem. She'll probably try some pure-power attacks like Draining Kiss and then realize she's a little screwed, meaning Ashley will switch up the tactics here, relying on Sand Attack and...Toxic, actually, thank goodness for Egg Moves! So with Heracross successfully poisoned and blinded by sand, she'll call back Sylveon...if she hasn't fainted by then which you know is incredibly likely? And then she'll send in her Meowstic, who is still a lower level than Heracross, but also has a type advantage on Fighting! ...He'll probably get beat to hell and back, though, if Heracross can get a hit in. With the poison and the accuracy lowering, hopefully a few good hits will take him down.
...And if Heracross still stands, there's the heavy hitter come to save the day, Litwick. She's more than ten levels higher, so that'll be the end of that! Litwick is also the Pokémon of choice to take on Scizor. There is frankly no better one, and Ashley's just going to go for Fire-type attack after Fire-type attack, back to type advantage over all, particularly Fire Spin, Flame Burst, and Inferno.
